Our book to read and discuss during August 2013 is Between Heaven and Texas by Marie Bostwick. While you're reading the book, sit at the kitchen table with main character Mary Dell and enjoy a Pimento Cheese Sandwich and a Dr. Pepper with her!
1 (7 ounce) jar chopped pimentos
2 Tablespoons grated Vidalia onion
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Dash cayenne pepper
2/3 cup Hellmann's mayonnaise
1. Grate the cheese into a large bowl.
2. Stir in the pimientos, onions, salt, black pepper, cayenne, and mayonnaise. Mash everything together with a fork to desired consistency.
3. Refrigerate for at least 2 hours before serving so the flavors can mellow.
4. Spread on Wonder Bread and serve with Dr. Pepper!

ReplyDeleteMy all time favorite sandwich has to be the BLT, with the addition of provolone cheese and sliced avocado, mmmmmmm.....
ReplyDeleteI think a grilled swiss cheese sandwich is my favorite!! One or more slices of swiss on thick cut, buttered, italian bread, grilled to a nice golden brown. Sorry, Mary Dell...mine will be with matzo ball soup ;-)
ReplyDelete(When I first started teaching we would often have lunch at a local restaurant. This was my favorite order.)
My mother always made pimento cheese using Velveeta cheese, pimentos and mayo. We made Dr. Pepper cake (& icing) yesterday. Bought the mix and the Dr. Pepper in Texas. Dr. Pepper was invented in Waco, TX. Till last year, you could get Dr. Pepper made with pure cane sugar (not artificial sweeteners) that was made in Dublin, TX. Have you ever tried to grill your pimento cheese? Yum! (it's a Texas thang)
ReplyDeleteI think I might join Mary Ann with the grilled cheese ... but then, again, if I am in a pinch for time, crunchy peanut butter will make me smile.

About the only sandwich I eat is Peanut butter on bread. I love peanut butter without bread or in anything. I always loved BLT but now I can't have bacon, so that is out. I usually eat a one slice sandwich.

Roast beef with either cheddar or swiss cheese is my all time favorite and then a pimento cheese is a close second. I like to make a grilled cheese out of my pimento cheese sandwiches..it's fantastic!
ReplyDeleteFunny reading your post though, because I have not had a pimento cheese in a couple of months and bought some last week and a 12 pack of Dr. Pepper which I also don't buy often. LOL! I had pimento cheese sandwiches and Dr. Pepper a few times last week for lunch. How ironic is that! ROFL! I also am a water drinking girl..the Dr. Pepper was a treat.
Grilled cheese with at least 4 different cheeses! Out here, in the west, Hellman's is called Best Foods. I love pimento cheese sandwiches and your recipe sounds delicious.

This time of year my favorite sandwich is a BLT made with home grown tomatoes.
ReplyDeleteIn AZ there was a place called Mag's Ham Bun, and they PILED thinly sliced ham on a yummy bun. I added mustard, and that was my favorite! They are no longer in business, but sometimes I make my own.

ReplyDeleteA ploughman sandwich with granary bread (ham, cheese and pickle) is a favourite choice of mine, but every so often I really crave an egg and cress sandwich.
ReplyDeleteMy favorite sandwich is chicken salad (the recipe with grapes, apples & walnuts). I enjoy pimiento cheese sandwiches grilled but have never tried it with Dr. Pepper. I think I will try that tomorrow!
